Prepare the Chicken
Preheat your oven to 400°F (200°C). In a shallow dish, combine the Parmesan cheese, breadcrumbs, salt, black pepper, and Italian seasoning. Dip each chicken breast in the mixture, coating them well on both sides.
Cook the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Transfer the chicken to a baking dish and bake for an additional 10 minutes.
Prepare the Tomato Topping
In the same skillet, add the remaining olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook until they start to burst, about 3-4 minutes. Stir in the fresh basil and season with salt and pepper to taste.
Serve
Remove the chicken from the oven, top each piece with the herbed tomato mixture, and serve immediately.
