Cook the Pasta

In a large pot of salted boiling water, cook the fettuccini according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the sliced onions, bell pepper, and mushrooms. Sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute.

Cook the Prime Rib

Add the shaved prime rib to the skillet with the vegetables. Season with salt and pepper. Cook until the meat is browned and cooked through, about 5 minutes.

Make the Sauce

In a separate saucepan, combine the heavy cream and gorgonzola cheese over medium heat. Stir until the cheese is melted and the mixture is smooth. Season with additional salt and pepper to taste.

Combine Pasta and Sauce

Add the drained fettuccini to the skillet with the meat and vegetables. Pour the gorgonzola cream sauce over the pasta and toss to combine.

Serve the pasta hot, sprinkled with grated romano cheese on top.
