    Prepare the Marinade

    In a bowl, mix together the miso paste, soy sauce, honey, sesame oil, salt, and black pepper to create a sweet glaze. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.

    Prepare the Grill

    Soak the hickory wood chips in water for about 30 minutes. This will help create smoke while grilling. Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and let the excess drip off. Place the salmon fillets on the grill, skin side down. Add the soaked hickory chips to the grill for flavor. Grill for about 6-8 minutes per side, or until the salmon is cooked through and has a nice char.

    Sauté the Mushrooms

    While the salmon is grilling, heat olive oil in a skillet over medium heat. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are tender and golden, about 5-7 minutes. Stir in the fresh herbs and season with salt and pepper.

    Serve

    Once the salmon is done, remove it from the grill and let it rest for a couple of minutes. Plate the salmon with the sautéed mushrooms on the side, and sprinkle toasted sesame seeds over the top for garnish. Enjoy your hickory-grilled miso salmon!
