Prepare the Mahi-Mahi
Season the mahi-mahi fillets with blackening seasoning, salt, and pepper. Heat a skillet over medium-high heat and cook the fillets for about 3-4 minutes on each side, or until cooked through and blackened. Remove from heat and flake into bite-sized pieces.

Make the Citrus Slaw
In a large bowl, combine shredded cabbage, grated carrot, chopped cilantro, and lime juice. Mix well and set aside to let the flavors meld.

Assemble the Tacos
Warm the flour tortillas in a skillet or microwave. Fill each tortilla with blackened mahi, a generous scoop of citrus slaw, and top with pineapple salsa. Sprinkle shredded Monterey Jack cheese over the top.

Serve the tacos immediately with extra lime wedges on the side for drizzling.
