    Prepare the Brisket

    Season the brisket with salt and pepper. Slow roast it in the oven at 300°F (150°C) for 4-5 hours until tender. Shred the brisket once it's cooked and set aside.

    Caramelize the Onions

    Slice the red onions thinly. In a skillet, heat the olive oil over medium heat. Add the onions and cook for 15-20 minutes, stirring frequently, until caramelized. Set aside.

    Cook the Pasta

    In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, combine heavy cream and minced garlic over medium heat. Once it starts to simmer, gradually whisk in the cheddar and Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

    In a large bowl, combine the cooked penne pasta and cheese sauce. Mix well to coat the pasta. Top with shredded brisket, caramelized onions, and drizzle with BBQ sauce. Serve immediately.
