    Prepare the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Broth and Seasonings

    Once the onions are caramelized, add the dry white wine and cook for an additional 5 minutes. Then, add the beef broth, thyme, bay leaves, salt, and pepper. Bring to a simmer and let cook for 20 minutes.

    Make the Croutons

    While the soup simmers, preheat the oven to 350°F (175°C). In a bowl, toss the cubed French bread with olive oil, garlic powder, and salt. Spread on a baking sheet and bake for 10-15 minutes until golden and crispy.

    Assemble the Soup

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top with croutons, and sprinkle Gruyere cheese generously over the top.

    Broil and Serve

    Place the bowls under the broiler for 2-3 minutes until the cheese is melted and bubbly. Carefully remove from the oven and serve hot.
