Crab Ravioli Preparation

Prepare the Filling
In a mixing bowl, combine the crab meat, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, salt, and black pepper. Mix well until all ingredients are combined.

Roll Out the Dough
On a floured surface, roll out the ravioli dough to about 1/8 inch thick. Use a cookie cutter or ravioli stamp to cut out circles of dough.

Fill the Ravioli
Place a teaspoon of the crab filling in the center of half of the dough circles. Moisten the edges with water, then top with the remaining dough circles. Press down to seal the edges and remove any air pockets.

Fry the Ravioli
In a large skillet, heat olive oil over medium heat. Add the stuffed ravioli and fry until golden brown on both sides, about 3-4 minutes per side.

Serve with Sauce
In a separate saucepan, heat the herbed tomato vodka sauce. Serve the fried ravioli topped with the warm sauce.
