Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Heat olive oil in a large skillet over medium heat.

Cook the Chicken
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add the sliced mushrooms and cook until they are golden, about 5 minutes. Then add the roasted red peppers and sauté for another 2-3 minutes.

Make the Beurre Blanc Sauce
Add white wine to the skillet and let it simmer for about 2 minutes. Then, add the heavy cream and let the mixture reduce for another 3-4 minutes. Stir in the butter until melted and mixed well.

Combine Everything
Return the chicken to the skillet and spoon the sauce and vegetables over it. Top each piece of chicken with a slice of provolone cheese and cover the skillet until the cheese melts.

Garnish with fresh chopped basil and serve immediately.
