Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).

Melt the Cheese
In the last minute of grilling, place a slice of pepper-jack cheese on each chicken breast, allowing it to melt slightly.

Prepare the Avocado
While the chicken is grilling, cut the avocado in half, remove the pit, and slice it into thin wedges.

Assemble the Sandwich
Once the chicken is cooked, remove it from the grill. Toast the sandwich buns if desired. Spread 2 tablespoons of chipotle mayonnaise on the bottom half of each bun. Layer the grilled chicken with melted cheese, sliced avocado, and a generous scoop of Pico de Gallo. Squeeze lime juice over the top before placing the other half of the bun on.
