Preparation

    Prepare the Pork Chop

    Preheat your grill to medium-high heat. Rub the pork chop with olive oil, garlic powder, salt, and black pepper. Let it sit at room temperature for about 15 minutes.

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and cut the red potatoes into quarters. In a bowl, toss the potatoes with olive oil, chopped rosemary, salt, and black pepper. Spread them on a baking sheet.

    Roast the Potatoes

    Place the baking sheet in the oven and roast the potatoes for about 25-30 minutes, or until golden brown and crispy, turning halfway through.

    Prepare the Asparagus

    While the potatoes are roasting, wash the asparagus and trim the tough ends. Toss with olive oil, salt, and black pepper.

Cooking

    Grill the Pork Chop

    Once the grill is hot, place the pork chop on the grill and cook for about 5-7 minutes per side, or until the internal temperature reaches 145°F (63°C). Remove from the grill and let it rest for 5 minutes.

    Grill the Asparagus

    In the last 5-7 minutes of the pork cooking, place the asparagus on the grill. Cook for about 3-4 minutes, turning occasionally, until tender and slightly charred.
