Prepare the Pork
Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions. Gently pound each medallion to an even thickness.

Bread the Pork
Dredge each pork medallion in flour, dip in the egg, then coat with the bread crumb mixture. Press down to ensure the crumbs adhere.

Fry the Pork
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded pork medallions and fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the hamburger buns if desired. On the bottom half of each bun, layer lettuce, a slice of tomato, a slice of onion, and a piece of the fried pork. Spread chipotle mayonnaise on the top half of the bun and place it on top of the sandwich.
