Prepare the Slaw
In a large bowl, combine the red cabbage, shredded carrots, and a pinch of salt. Toss to mix well and set aside.

Prepare the Grouper
Season the grouper fillets with salt and black pepper. Dredge each fillet in flour, dip into the beaten egg, and roll in breadcrumbs until fully coated.

Fry the Grouper
In a large skillet, heat oil over medium-high heat. Once hot, add the breaded grouper fillets and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Assemble the Sandwich
On one slice of grilled marble rye bread, layer a slice of Swiss cheese, followed by a fried grouper fillet, a generous amount of red cabbage slaw, and a drizzle of Russian dressing. Top with another slice of bread.

Grill the Sandwich
Grill the assembled sandwiches on both sides until the bread is crispy and the cheese is melted, about 2-3 minutes per side.

Cut the sandwiches in half and serve immediately with extra Russian dressing on the side.
