Cottage Cheese Preparation

    Heat the Milk

    In a large pot, heat the milk over medium heat until it reaches about 120°F (49°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Once the milk is heated, remove it from the heat and slowly add the white vinegar while stirring gently. Let it sit for about 5 minutes until curds form.

    Strain the Curds

    Set a fine mesh strainer over a bowl and pour the curds into the strainer. Allow the whey to drain out for about 10 minutes.

    Rinse the Curds

    Rinse the curds under cold running water to remove any residual whey and vinegar flavor. Once rinsed, let them drain for another 5 minutes.

    Season and Mix

    Transfer the curds to a bowl, add salt and mix gently. If desired, stir in the heavy cream to achieve a creamier texture.

    Store

    Store the cottage cheese in an airtight container in the fridge for up to 1 week.
