Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon.

Caramelize the Onions

In the same skillet, remove excess bacon fat leaving about 1 tablespoon. Add the chopped onion and cook over medium-low heat until soft and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Prepare the Egg Mixture

In a large bowl, whisk together the eggs, heavy cream, salt, black pepper, and fresh thyme until well combined.

Combine Ingredients

Stir in the crumbled bacon, caramelized onions, and grated cheese into the egg mixture.

Bake the Quiche

Preheat the oven to 375°F (190°C). Pour the mixture into a prepared pie crust. Bake for 35-40 minutes or until the center is set and the top is golden brown. Let it cool for a few minutes before slicing.
