Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Butternut Squash
Peel and dice the butternut squash into 1-inch cubes.

Season the Squash
In a large bowl, toss the cubed squash with olive oil, salt, and black pepper until evenly coated.

Roast the Squash
Spread the seasoned squash on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

Add Cranberries and Thyme
In the last 5 minutes of roasting, add the dried cranberries and fresh thyme to the baking sheet, stirring to combine.

Finish with Maple Syrup and Walnuts
Once the squash is done, remove from the oven and drizzle with maple syrup. Sprinkle chopped walnuts on top before serving.
