Brewing Instructions

Mashing
In a large brew kettle, combine 5 gallons of water with flaked corn and Pilsner malt. Heat to 152°F (67°C) and hold for 60 minutes.

Sparging
After mashing, sparge with enough water to collect about 6 gallons of wort.

Boiling
Bring the wort to a boil. Add Hops and boil for 60 minutes, adding lime and grapefruit zest in the last 5 minutes.

Cooling
Cool the wort quickly using a wort chiller until it reaches about 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the lager yeast. Seal with an airlock and ferment at 50°F (10°C) for 2 weeks.

Bottling
After fermentation is complete, dissolve priming sugar in a small amount of water, add to the beer, and bottle.

Carbonation
Allow the bottles to carbonate at room temperature for 2 weeks.

Chilling and Serving
