Preheat the Oven
Preheat your oven to 450°F (230°C).

Mix Dry Ingredients
In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk them together until well mixed.

Cut in Butter
Add the unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined; do not overmix.

Shape the Biscuits
Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Fold it over onto itself 3-4 times, then roll out to about 1-inch thick again.

Cut the Biscuits
Use a biscuit cutter or a drinking glass to cut out biscuits. Place them on a baking sheet, close together but not touching.

Bake
Bake in the preheated oven for 12-15 minutes or until golden brown on top.

Remove from the oven and let cool slightly before serving warm with house-made jam.
