Prepare the Dough

Knead the dough on a floured surface for about 10 minutes until smooth. Form into a ball, place in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Fillings

While the dough is rising, prepare the fillings. Divide the fillings into meat (ham and cheddar) and vegetarian (spinach, feta, and mushrooms) options.

Shape the Croissants

Once the dough has risen, roll it out into a large rectangle about 1/4 inch thick. Cut the dough into triangles. Place a spoonful of your chosen filling at the wide end of each triangle. Roll it up towards the pointed end and shape it into a crescent.

Final Rise and Bake

Place the shaped croissants on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes. Preheat the oven to 375°F (190°C). Brush the croissants with melted butter and bake for 20-25 minutes until golden brown.
