Prepare the Apples
Peel, core, and slice the apples into thin wedges. In a large bowl, combine the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Toss well to coat the apples evenly and set aside.

Assemble the Pie
Pour the apple filling into the crust, making sure to arrange the apples evenly. Cover with the second pie crust, crimping the edges to seal. Cut slits in the top crust to allow steam to escape.

Bake the Pie
Preheat the oven to 425°F (220°C). Bake the pie for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the apples are tender and the crust is golden brown.

Cool and Serve
Once baked, remove the pie from the oven and let it cool for at least 2 hours before slicing. Serve warm or at room temperature.
