Prepare the Ingredients

Chop the bacon, leeks, potatoes, carrots, celery, and garlic. Set aside.

Cook the Bacon

In a large pot, heat olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Sauté the Vegetables

In the same pot, add leeks, carrots, celery, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.

Add Potatoes and Clam Juice

Add diced potatoes to the pot and pour in the clam juice. Stir in bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

Add Seafood and Cream

Add fish fillets, shrimp, and chopped clams to the pot. Stir in the heavy cream and cook for another 5-10 minutes until the seafood is cooked through.

Finish and Serve

Stir in the reserved bacon, remove bay leaves, and adjust seasoning if needed. Serve hot.
