Method

Prepare Ahi Tuna

Season the Tuna

Rub the Ahi tuna steaks with olive oil, Moroccan spice blend, salt, and black pepper. Let them marinate for about 15 minutes.

Sear the Tuna

Heat a skillet over high heat. Sear the tuna steaks for about 1-2 minutes on each side for rare. Remove from heat and let rest.

Prepare Couscous

Cook Couscous

In a pot, bring vegetable broth to a boil. Add Israeli couscous and cook for about 8-10 minutes until tender. Stir in chopped kale and sliced chorizo, cooking for an additional 2-3 minutes until kale is wilted.

Prepare Crispy Leeks

Fry the Leeks

In a bowl, toss the sliced leeks with flour and salt. Heat oil in a frying pan and fry the leeks until golden brown and crispy. Drain on paper towels.

Prepare Orange and Tomato Sauce

Make the Sauce

In a saucepan, combine tomato sauce, orange juice, minced garlic, salt, and black pepper. Simmer for about 5-7 minutes until heated through.

Assemble the Dish

Plate the Dish

On a plate, serve a portion of the couscous mixture, top with sliced Ahi tuna, drizzle the orange and tomato sauce, and garnish with crispy leeks.
