    Prepare the Fries

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

    Fry the Fries

    Add the frozen crinkle-cut fries to the hot oil in batches, frying until golden brown and crispy, about 3-5 minutes. Remove from oil and drain on paper towels.

Cheese Curds

    Prepare the Cheese Curds

    In a bowl, combine flour, salt, and black pepper. In another bowl, whisk together the egg and milk. In a third bowl, place the breadcrumbs.

    Bread the Cheese Curds

    Dip each cheese curd first into the flour mixture, then into the egg mixture, and finally coat with breadcrumbs. Make sure they are well-coated.

    Fry the Cheese Curds

    In a separate pot, heat vegetable oil to 350°F (175°C). Fry the breaded cheese curds in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Gravy

    Make the Gravy

    In a saucepan, melt the unsalted butter over medium heat. Whisk in the flour and cook for about 2-3 minutes until it becomes a light golden color.

    Slowly whisk in the beef broth and soy sauce, stirring continuously until the gravy thickens, about 5-7 minutes. Season with salt and black pepper.

Assembly

    Assemble the Poutine

    On a plate or in a bowl, place a generous serving of fries. Top with deep-fried cheese curds and drizzle with hot brown gravy. Serve immediately.
