Pasta

Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt.

  2. 2

    Cook Pasta

Add 8 cups of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain Pasta

Once cooked, drain the pasta and set aside, reserving 1 cup of the pasta water.

Preparing Vegetables

  1. 4

    Chop Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, cherry tomatoes, and carrots into bite-sized pieces.

  2. 5

    Prepare Broccoli

Cut broccoli into small florets and set aside.

  3. 6

    Minced Garlic

Peel and mince the garlic cloves.

Making the Sauce

  1. 7

    Sauté Vegetables

In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the minced garlic, and sauté for about 1 minute until fragrant.

  2. 8

    Add Vegetables

Add the chopped bell peppers, zucchini, carrots, and broccoli to the skillet. Sauté for 5-7 minutes until they start to soften.

  3. 9

    Add Cherry Tomatoes

Add the cherry tomatoes and continue to cook for an additional 2-3 minutes.

  4. 10

    Add Broth and Season

Pour in 1 cup of vegetable broth, and season with black pepper and red pepper flakes. Stir well and let it simmer for 3-4 minutes.

Combining and Serving

  1. 11

    Combine Pasta and Sauce

Add the drained pasta to the skillet with the vegetables and sauce. Toss gently to combine, adding reserved pasta water as necessary to loosen the sauce.

  2. 12

    Add Cheese and Basil

Remove from heat, stir in 1 cup of grated Parmesan cheese and 0.5 cup of chopped fresh basil until well mixed.

  3. 13

    Serve

Serve hot, garnished with additional Parmesan and basil if desired.
