Preparing the Fries

Fry the Potatoes
In a deep frying pan or fryer, heat the vegetable oil to 350°F (175°C). Once the oil is hot, add the crinkle cut fries in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per batch.

Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt to taste while hot.

Add the Meat and Beans
Stir in the smoked beef brisket, canned kidney beans, and diced tomatoes. Mix well to combine.

Season the Chili
Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir to coat the ingredients evenly.

Simmer
Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 20-25 minutes, stirring occasionally.
Assembling the Dish

Layer the Fries
On a serving plate, create a base layer of the crispy fries.

Spoon a generous portion of the smoked beef brisket chili over the fries.

Sprinkle shredded cheddar cheese over the chili, followed by diced red onion.
