Prepare the Potatoes
Wash the Russet potatoes thoroughly under running water to remove any dirt. Pat them dry with a clean towel.

Cut the Potatoes
Cut each potato into wedges. First, cut the potato in half lengthwise, then cut each half into 3-4 wedges depending on the size of the potato.
Seasoning

Season the Wedges
In a large bowl, combine salt, black pepper, garlic powder, paprika, and onion powder. Toss the potato wedges in the seasoning mix until they are evenly coated.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil with a small piece of potato; it should sizzle when added.

Fry the Wedges
Carefully add the seasoned potato wedges to the hot oil in batches (do not overcrowd the pan). Fry for about 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.
Serving

Serve the Potato Wedges
Arrange the fried potato wedges on a serving platter. Serve with your choice of dipping sauces such as ketchup, ranch dressing, or BBQ sauce.
