Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and chopped fresh dill. Whisk until well blended.

  2. 2

    Marinate the Salmon

Place the salmon fillets in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

While the salmon is marinating, slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

  2. 4

    Season the Vegetables

In a large bowl, toss the chopped zucchini, bell peppers, and asparagus with olive oil, salt, and black pepper until evenly coated.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F / 190°C).

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for 5-6 minutes on each side, or until the salmon flakes easily with a fork.

  3. 7

    Grill the Vegetables

Place the seasoned vegetables on the grill. Grill for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.

Serving

  1. 8

    Plate the Dish

Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate.
