Prepare the Chicken

    Marinate the Chicken

    Season the chicken breasts with lemon pepper, Cajun seasoning, or Frank's Red Hot Sauce as desired. Let them marinate for at least 15 minutes to absorb the flavors.

    Grill the Chicken

    Preheat your grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.

Prepare the Salad

    Chop the Vegetables

    While the chicken is grilling, chop the iceberg lettuce into bite-sized pieces. Slice the red onion thinly, clean and slice the mushrooms, and dice the tomatoes.

    Assemble the Salad

    In a large bowl, combine the chopped iceberg lettuce, red onion, mushrooms, and diced tomatoes. Toss gently to mix.

Serve the Dish

    Slice the Chicken

    Once the chicken has rested for a few minutes, slice it into strips.

    Plate the Salad

    Top the salad with the sliced grilled chicken. Drizzle with olive oil and balsamic vinegar, and sprinkle with salt and black pepper to taste.
