Method
Pork Chops Preparation

Season the Pork Chops
In a small bowl, mix salt, pepper, garlic powder, and onion powder. Rub the mixture onto both sides of each pork chop. Let sit for 15 minutes.

Prepare the Batter
While the pork chops are resting, prepare the batter. In a medium bowl, whisk together flour, cornstarch, baking powder, paprika, cayenne pepper, and salt.

Fry the Pork Chops
Heat oil in a deep fryer or large pot to 350°F (175°C). Dip each seasoned pork chop into the batter, allowing excess to drip off, then carefully place in hot oil.

Finish the Pork Chops
Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Country Gravy Preparation

Make the Roux
Sprinkle the flour over the drippings and whisk until golden brown, about 2 minutes.

Make the Gravy
Gradually whisk in milk, stirring constantly until thickened. Add cooked sausage back into the gravy and season with salt and pepper.

Bake the Wedges
Spread the wedges in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway through, until golden and crispy.
Creamy Coleslaw Preparation

Mix Vegetables
In a large bowl, combine shredded cabbage and grated carrots.

Make the Dressing
In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.

Combine and Chill
Pour the dressing over the cabbage and carrots, and toss until well combined. Refrigerate for at least 30 minutes before serving.
