Preparing the Pork Chops

Prepare the Pork Chops
Pat the pork chops dry with paper towels and season both sides with salt and black pepper.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Gradually add cold water while whisking until you achieve a smooth, thick batter.

Heat the Oil
In a deep frying pan or a deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Pork Chops
Dunk each pork chop into the batter, ensuring it is fully coated. Carefully place the batter-coated pork chop into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.
Assembling the Sandwich

Toast the Buns
Slice the potato buns in half and lightly toast them on a grill or in a toaster until golden.

Build the Sandwich
Spread mayonnaise on the bottom half of each toasted bun. Place a fried pork chop on top, followed by lettuce, tomato slices, onion, and pickles. Close the sandwich with the top half of the bun.

Cook the Fries
In the same oil used for the pork chops, fry the crinkle cut fries according to package instructions until crispy and golden brown. Drain on paper towels.

Serve the pork chop sandwiches with a side of crispy crinkle cut fries.
