Country Fried Steak

    Prepare the Steak

    Begin by tenderizing the cube steak using a meat mallet. Pound each piece until about 1/2 inch thick.

    Make the Batter

    In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika.

    Prepare the Wet Mixture

    In another bowl, whisk together the buttermilk and eggs until well combined.

    Dredge the Steak

    Dip each piece of the cube steak first into the wet mixture, then into the dry batter, ensuring it's well coated.

    Fry the Steak

    Heat the vegetable oil in a deep frying pan over medium-high heat. Fry the coated steak pieces for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

Country Gravy

    Make the Roux

    In a saucepan, melt the butter over medium heat. Once melted, whisk in the all-purpose flour until smooth and bubbly.

    Add Milk

    Gradually add the milk while continuously whisking to avoid lumps. Cook until the gravy thickens.

    Season the Gravy

    Season with salt and black pepper to taste. Keep warm until ready to serve.

Jo-Jo Seasoned Potato Wedges

    Prepare the Potatoes

    Wash and cut the russet potatoes into wedges. Leave the skin on for extra flavor.

    Season the Wedges

    In a large bowl, toss the potato wedges with olive oil, salt, black pepper, paprika, and garlic powder until evenly coated.

    Bake the Wedges

    Spread the seasoned wedges on a baking sheet and bake in a preheated oven at 425°F (220°C) for about 30-35 minutes or until golden and crispy, flipping halfway through.

Creamy Coleslaw

    Prepare the Vegetables

    Shred the green cabbage and carrots using a grater or food processor.

    Mix the Dressing

    In a large bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well.

    Add the shredded cabbage and carrots to the dressing and mix until well combined. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
