Preparing the Corned Beef

    Rinse and Prepare

    Rinse the corned beef brisket under cold water to remove excess salt. Pat dry with paper towels.

    Season the Beef

    Rub the corned beef with salt, black pepper, garlic powder, and onion powder evenly on all sides.

    Cook the Corned Beef

    Place the seasoned corned beef in a large pot and cover it with water. Bring to a boil, then reduce heat to a simmer. Cover and cook for 2.5 to 3 hours, or until fork-tender.

Preparing the Vegetables

    Prepare Cabbage

    While the corned beef is cooking, remove the core from the cabbage and cut it into wedges.

    Prepare Potatoes and Carrots

    Wash the red skinned potatoes and baby carrots. Cut the potatoes in half if they are large.

    Steam the Vegetables

    In the last 30 minutes of cooking the corned beef, add the cabbage wedges, potatoes, and carrots to the pot. Cover and steam until the cabbage is tender and vegetables are cooked through.

Finishing Touches

    Once the corned beef and vegetables are cooked, carefully remove them from the pot and place them on a serving platter. Drizzle with olive oil and season with additional salt and pepper to taste.
