Using a microplane or zester, carefully zest the orange until you have 2 teaspoons of zest. Be careful not to include the bitter white pith.

Cut the orange in half and juice it to yield 1 tablespoon of fresh orange juice. Strain the juice to remove any seeds or pulp if desired.

In a large pitcher, combine the sparkling water, orange zest, fresh orange juice, and honey or agave syrup (if using). Stir gently to mix the ingredients without losing the carbonation.
