Huckleberry Infusion Preparation

    Prepare the Huckleberries

    Rinse the fresh huckleberries under cold water to remove any dirt. Drain well.

    Make Huckleberry Syrup

    In a small saucepan, combine the rinsed huckleberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture begins to bubble. Reduce heat and simmer for about 5 minutes, crushing the huckleberries lightly with a spoon to release their juices. Remove from heat and let cool.

Sparkling Water Assembly

    Combine Ingredients

    In a large pitcher, pour in the sparkling water. Once the huckleberry syrup has cooled, strain the mixture through a fine mesh sieve to remove the solids, and add the liquid syrup to the sparkling water. Stir gently to combine.

    Serve

    Pour the huckleberry sparkling water into glasses over ice. For added flair, garnish with a handful of fresh huckleberries and a slice of lemon on the rim of each glass.
