Seafood Quesadilla Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Seafood

In a bowl, toss the Gulf shrimp with blackening seasoning until evenly coated. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and add the shrimp. Cook for about 2-3 minutes per side or until they are cooked through and have a nice char. Remove from the skillet and set aside.

  2. 2

    Sauté the Vegetables

In the same skillet, add another tablespoon of olive oil and sauté the onion, bell pepper, and garlic until they are softened, about 5 minutes. Add the diced tomatoes and cook for an additional 2 minutes. Remove from heat.

  3. 3

    Assemble the Quesadillas

On one half of each tortilla, layer some of the sautéed vegetables, followed by the cooked shrimp, crab meat, and a generous amount of cheddar jack cheese. Fold the tortilla over to cover the filling.

  4. 4

    Cook the Quesadillas

Wipe the skillet clean and heat over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with remaining quesadillas.

  5. 5

    Serve

Cut the quesadillas into wedges and serve with lime wedges and chopped cilantro on the side.
