Prepare the Seafood
In a bowl, toss the Gulf shrimp with blackening seasoning until evenly coated. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and add the shrimp. Cook for about 2-3 minutes per side or until they are cooked through and have a nice char. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil and sauté the onion, bell pepper, and garlic until they are softened, about 5 minutes. Add the diced tomatoes and cook for an additional 2 minutes. Remove from heat.

Assemble the Quesadillas
On one half of each tortilla, layer some of the sautéed vegetables, followed by the cooked shrimp, crab meat, and a generous amount of cheddar jack cheese. Fold the tortilla over to cover the filling.

Serve
Cut the quesadillas into wedges and serve with lime wedges and chopped cilantro on the side.
