Cook the Grits
In a large saucepan, bring the chicken broth to a boil. Stir in the grits, reduce the heat to low, and simmer uncovered, stirring occasionally, until thickened, about 20-25 minutes. Remove from heat and stir in butter and cheddar cheese until melted and smooth.

Prepare the Bacon
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Cook the Shrimp
In the same skillet with the bacon fat, add the minced garlic and cook for about 30 seconds until fragrant. Add the shrimp and sprinkle with Cajun seasoning, salt, and black pepper. Cook for 3-5 minutes until shrimp are pink and opaque.

Combine and Serve
To serve, spoon the creamy grits into bowls, top with the cooked shrimp, and sprinkle with crispy bacon, green onions, and chopped parsley. Enjoy!
