Preheat your oven to 350°F (175°C). Tear the day-old French bread into bite-sized pieces and place them in a large mixing bowl.

Pour the custard mixture over the torn bread, ensuring all pieces are soaked. Add in the raisins and bourbon (if using) and gently fold to combine.
