    Prepare the Ingredients

    Gather and prepare all the ingredients by chopping vegetables and slicing the sausage.

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the andouille sausage and cook until browned, about 5 minutes.

    Add the Chicken

    Add the chicken thighs to the pot and cook until browned on all sides, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are tender, about 5 minutes.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes, chicken broth, okra, bay leaves, Cajun seasoning, salt, and black pepper. Bring to a boil.

    Simmer the Gumbo

    Reduce the heat to low and let the gumbo simmer for about 30 minutes, stirring occasionally.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp and cook until they turn pink and are cooked through.

    Remove bay leaves and serve the gumbo over cooked rice. Garnish with sliced green onions.
