Preparation and Assembly

    Prepare the Gator Meat

    Cut the gator meat into strips and season with Cajun seasoning. Set aside.

    Prepare the Breading

    In one bowl, combine the flour and cornmeal. In another bowl, whisk together the eggs and milk.

    Bread the Gator Meat

    Dip the seasoned gator strips into the egg mixture, then coat with the flour and cornmeal mixture.

    Fry the Gator Meat

    Heat the oil in a deep pan over medium heat. Fry the breaded gator strips for about 3-4 minutes or until golden brown. Remove and drain on paper towels.

    Prepare the Sandwich

    Slice the French bread. Spread mayonnaise on both sides. Layer with lettuce, fried gator strips, sliced tomatoes, and pickles.

    Serve

    Serve the Gator Po-Boy with a side of fries.
