Fried Shrimp Po-Boy Preparation

Prepare the Shrimp
In a large bowl, combine the buttermilk and Cajun seasoning. Add the shrimp, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a shallow dish, mix together the cornmeal, flour, salt, and black pepper.

Fry the Shrimp
Remove the shrimp from the buttermilk mixture, allowing excess to drip off. Dredge the shrimp in the cornmeal mixture, ensuring they are evenly coated. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Assemble the Po-Boys
Slice the French bread or po-boy rolls in half lengthwise. Spread a generous amount of remoulade sauce on each side. Layer with shredded lettuce, sliced tomato, fried shrimp, and pickles. Top with the other half of the bread.

Cut the po-boys in half and serve immediately with extra remoulade on the side.
