Prep the Potatoes
Peel the russet potatoes and cut them into even sticks, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato sticks in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove moisture.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato sticks to the hot oil in batches, frying for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. Immediately sprinkle with salt while they are still hot.

Serve the fries hot with your choice of dipping sauces.
