Add the soaked beans, vegetable broth, bay leaves, and Cajun seasoning. Bring to a boil, then reduce heat and simmer for about 1.5 hours or until beans are tender. Season with salt and black pepper to taste.

Cook the Rice
In a separate pot, cook the long-grain white rice according to package instructions. Generally, combine 1 cup rice with 2 cups water, bring to a boil, cover, and simmer until water is absorbed.

Grill the Andouille Sausage
While the beans and rice are cooking, preheat a grill or grill pan over medium heat. Grill the andouille sausage links for about 6-8 minutes, turning occasionally, until browned and cooked through.

Fry the Fish
In a shallow dish, dip the tilapia fillets in buttermilk, then dredge in cornmeal mixed with salt and black pepper. Heat oil in a skillet over medium-high heat and fry the fish for 3-4 minutes on each side until golden brown.

Once everything is cooked, serve the red beans over rice, topped with grilled andouille sausage and fried fish on the side.
