Combine Ingredients
Stir in the crawfish tails, chicken or seafood stock, tomato paste, Cajun seasoning, salt, black pepper, and bay leaves. Bring to a simmer.

Reduce the heat to low, cover, and let simmer for about 30-40 minutes, stirring occasionally to prevent sticking.
