Directions

  1. 1

    Prepare the Roux

In a large heavy pot or Dutch oven, heat the olive oil over medium heat. Add the flour and stir continuously until the mixture turns a dark brown color, about 15-20 minutes. This is crucial for developing the flavor of the gumbo.

  2. 2

    Sauté Vegetables

Add the chopped onion, green bell pepper, celery, and minced garlic to the roux. Sauté for about 5 minutes, until the vegetables are softened.

  3. 3

    Add Sausage

Stir in the sliced Andouille sausage and cook for another 5 minutes, allowing the flavors to meld.

  4. 4

    Combine Ingredients

Add the diced tomatoes, chicken broth, bay leaves, Cajun seasoning, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.

  5. 5

    Add Seafood

Stir in the shrimp, crab meat, and okra. Cook for an additional 10 minutes, or until the shrimp are pink and cooked through.

  6. 6

    Serve

Remove bay leaves before serving. Serve the gumbo over cooked rice and garnish with chopped parsley.
