1. Prepare the Roux

In a large heavy pot or Dutch oven, heat the olive oil over medium heat. Add the flour and stir continuously until the mixture turns a dark brown color, about 15-20 minutes. This is crucial for developing the flavor of the gumbo.

Stir in the shrimp, crab meat, and okra. Cook for an additional 10 minutes, or until the shrimp are pink and cooked through.

Remove bay leaves before serving. Serve the gumbo over cooked rice and garnish with chopped parsley.
