Flank Steak & Eggs

Method

Flank Steak & Eggs Preparation

  1. 1

    Cook the Flank Steak

Preheat a grill or skillet over medium-high heat. Season the flank steak with salt and black pepper. Add olive oil to the skillet or brush it on the grill. Cook the steak for about 4-5 minutes on each side for medium-rare or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

  2. 2

    Cook the Eggs

In a non-stick skillet, heat a small amount of olive oil over medium heat. Crack the eggs into the skillet and cook to your desired level of doneness (sunny side up, over easy, etc.). Season with salt and pepper.

  3. 3

    Assemble the Dish

Slice the rested flank steak against the grain. Serve the sliced steak on a plate topped with fried eggs and drizzled with chimichurri sauce.
