    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes.

    Add the diced bell pepper, onion, celery, and minced garlic to the pot. Sauté for an additional 5 minutes, until the vegetables are tender.

    Add Rice and Spices

    Stir in the rice, Cajun seasoning, salt, and black pepper. Cook for another minute to toast the rice slightly.

    Add Broth and Shrimp

    Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to low and add the shrimp. Cover and simmer for 10 minutes.

    Cook the Catfish

    In a separate skillet, cook the catfish fillets over medium heat until golden brown and cooked through, about 4-5 minutes per side.

    Serve the rice mixture with the cooked catfish on top. Garnish with sliced green onions and chopped parsley.
