Preparation

    Wash and Chop the Greens

    Rinse the sukuma wiki (collard greens or kale) thoroughly under running water. Remove any tough stems and chop the greens into bite-sized pieces.

    Prepare the Aromatics

    Finely chop the onion, garlic, and ginger. Set aside.

Cooking

    Heat the Oil

    In a large skillet or frying pan, heat the olive oil over medium heat.

    Sauté Aromatics

    Add the chopped onion to the skillet and sauté for about 3-4 minutes, or until it becomes translucent. Then add the minced garlic and grated ginger, and cook for an additional 1-2 minutes until fragrant.

    Add the Greens

    Stir in the chopped sukuma wiki (collard greens or kale) into the skillet. Cook for about 5-7 minutes, stirring occasionally, until the greens are wilted and tender.

    Season

    Add the red chili flakes, salt, and black pepper to taste, stirring well to combine all the ingredients. Cook for an additional 2-3 minutes.

Serving

    Serve Hot

    Remove from heat and transfer the sautéed sukuma to a serving dish. Enjoy warm as a side dish or as part of a main meal.
