Chicken Marinade Preparation

Marinate the Chicken
In a bowl, combine minced garlic, grated ginger, ground cumin, ground coriander, chili powder, salt, black pepper, olive oil, and lemon juice. Mix well to form a marinade.

Add Chicken
Add the chicken breasts to the marinade. Ensure they are evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced bell peppers and onion. Sauté for about 5-7 minutes, or until vegetables are soft and slightly caramelized. Set aside.
Cooking the Chicken

Cook the Chicken
In the same skillet, add the marinated chicken breasts over medium heat. Cook for 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown color.

Rest the Chicken
Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Then slice the chicken into strips.

Prepare the Sandwich
Spread mayonnaise on the inside of each sandwich roll. Layer the sliced chicken, sautéed peppers, and onions on each roll.

Garnish and Serve
Top with fresh cilantro, close the sandwiches, and serve immediately.
