Method
Rice Pilau

Rinse the Rice
In a bowl, rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger. Cook for about 1 minute until fragrant.

Spice it Up
Add cumin seeds, coriander powder, salt, and black pepper to the pot. Stir well to combine.

Cook the Rice
Add the rinsed rice to the pot and stir to coat the rice with the spices. Pour in the water and bring to a boil.

Simmer
Once boiling, reduce heat to low, cover, and let simmer for about 15-20 minutes or until the rice is cooked and water is absorbed.

Add Vegetables
In the last 5 minutes of cooking, add the mixed vegetables to the rice, cover, and continue cooking.

Fluff and Serve
Once done, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
Sugoo (Stew)

Prepare the Meat
Cut the assorted meat into bite-sized pieces and set aside.

Stir in the minced garlic and grated ginger, cooking for about 1 minute.

Cook the Meat
Add the cut meat to the pot. Cook until browned on all sides.

Add Tomatoes and Seasoning
Stir in the chopped tomatoes, salt, and black pepper. Cook until the tomatoes break down into a sauce.

Add Water
Pour in the water, bring to a boil, then reduce heat to low. Cover and let simmer for about 30 minutes, or until meat is tender.

Finish and Garnish
Once the meat is tender, check seasoning and adjust if necessary. Garnish with fresh coriander leaves before serving.
