Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt together over a double boiler or in the microwave in 30-second intervals until smooth and well combined. Stir occasionally to prevent burning.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir gently to combine. Add the vanilla extract, flour, and a pinch of salt, mixing until just combined.

Baking

  1. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 6

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 7

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate, tapping gently to release the cake. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
