    Chop the Vegetables

    Wash and chop the zucchini, yellow squash, cabbage, carrots, and potatoes into bite-sized pieces. Rinse the spinach thoroughly and set aside.

    Mince Garlic and Chop Onion

    Peel and mince the garlic cloves. Peel and chop the onion into small pieces.

Cooking

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion is translucent, about 3-4 minutes.

    Add Vegetables

    Add the chopped zucchini, yellow squash, carrots, and potatoes to the pot. Stir well and cook for another 5 minutes.

    Pour in Broth and Season

    Pour in the vegetable broth, and add the chopped cabbage, spinach, salt, black pepper, thyme, and bay leaf. Stir to combine.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the vegetables are tender.

Serving

    Serve the Stew

    Remove the bay leaf before serving. Ladle the stew into bowls and enjoy hot.
